“Woku” means seasoning, and “woka” refers to palm leaves. This popular traditional dish from Manado is made by cooking fish wrapped in palm leaves. At Mata Karanjang, the fish is marinated and then cooked over coals for two hours, which imparts a distinct aroma and flavour. While it is called “pepes,” the chef uses palm leaves instead of banana leaves. The elevated Ikan Woku Woka dish is definitely a must-try when visiting Mata Karanjang!
