Thinly sliced and dried for two days are the reasons Seia’s dendeng balado different from other restaurants. The relatively long drying time results in a crispy texture. The meat is then fried over high heat, producing a smoky aroma and an even crispier texture. The dendeng is served with fresh red sambal that is not too spicy, making it enjoyable for everyone.
