Creative Modern Flavors from Peggy’s Brass Knuckles

Locavore’s first restaurant in Jakarta, Peggy’s Brass Knuckles, has just launched its volume 3 menu. The Public Book Team has the chance to taste them firsthand.

 

Peggy’s is not your ordinary restaurant. With an onsite butcher shop, bakery, and grocery, each dish is a masterpiece crafted with the freshest local produce. This unique concept shines through their Volume 3 menu, which includes a selection of small plates, big plates, sides, and desserts.

 

We were able to taste several delectable dishes from the list;

 

Raw fish with chilled beuree blanc, candied kecombrang herb, and chili oil. The freshness of the fish combined with the fragrant kecombang herb, is a delightful harmony.

 

Grilled Pork Chop, braised coconut flower, smoked ham demi glaze. The juicy meat was tender and created a perfect balance of texture with the crunchiness of the coconut flower.

 

Thinly sliced beef tongue, kimchi bearnaise, pickled genjer, Kaze puffed rice, chives. Met with an unexpected combination of flavor, we especially enjoyed the balance of acidity and wonderful texture of the meat and puffed rice.

 

We are in for a treat for a wonderful dessert with Lamington, burnt lime meringue—a heavenly sweet-sour flavor with a hint of smoky taste.

 

The selection of menus is another testament to Locavore and Peggy’s commitment to creating a creative modern cuisine using local produce.
